You have to wait a little but it's fully doable. I rejected fiew rides to Hamburg itself and went with driver who was going towards Bremen however during ride I found out that my driver was actually going towards the Netherlands so I decided to go there with him. At the spot itself there is nice forest for camping at night, you can access it by first crossing first fence using an open entrence for service road located in between two fences, then go litte bit north till you se place in which fence has been cutted. Then you are here, actually I would say that this spot is much better for sleeping than previous little bit up north of here and yes, thumbing at the exit works, you just need to be patient so if you are shy like me just stand there and somebody will stop

First I tried to get behind Hamburg towards Hanover but only people who stopped were going into Hamburg itself. After some waiting I decided to accept ride to another gas station little bit closer to Hamburg

Decent spot for getting North out of Hamburg. Probably would have been better with a sign.

It worked very good.
We talked to some people and someone took us to Hamburg.
Even over us a place to sleep if we wanted which we gladly accepted.
It was a very nice experience!

Very low traffic volumes, probably better to jump off at the bigger raststatte Aalbek half an hour before if you need to go past hamburg.

It’s shortly before Hamburg, so unless you want to go there, don’t stop here. We wanted to go further south, and no one was going further than Hamburg

Solo female, Sunday midday. At first was waiting at the end of the gas station with sign to Hannover, did not work. Forgot Germans like to be asked. I sat on the stairs to the shop while writing a new sign and a woman approached me immediately with ride to almost Hannover.

It wasn't that good for me. But I had a sign for Hannover, lots of people going to Hamburg or direction Bremen. Lots of full cars and old couples who don't want to atop. Asking around should work better though.

A bit Dangers. Lot of traffic and not a lot of space. But super easy to get into Hamburg from here.

seems to be excellent to get a lift to hamburg but it is a bit more difficult to get a lift farer than hamburg on the a7 but at least a good point in both directions

This is good place to go to Kiel or to Flensburg.

Holmmoor is a good place to get a lift, but there are far less cars stopping than in Aalbek a few kilometres to the north. hamburg or bremen should be no problem, but hannover or berlin is quite tricky. nevertheless, if you got time and a little piece of patience, you wont wait longer than 1 hour.
